The sidekick can be strong, smart and skilled, but should never be an authority over the player, nor be privy to secret information - breaking into a dungeon loses it's flavor if the player only needs to ask their sidekick how to accomplish everything. This is a helpful NPC allied with the PC but under the control of the DM to avoid forcing the player to track multiple character sheets and personalities. One way to ensure the player doesn't get overwhelmed is to give them a sidekick. The point isn't to slow pitch easy problems to the player, but to allow them to be challenged with adventures they will be engaged with and have solid chance of succeeding at. A paladin? Maybe the antagonist is a dark knight with a taste for jousting and tourneys. If they are a wizard, let them leverage their intelligence and spells. If they are a rogue, perhaps feature traps, locks and stealth challenges. All classes have some things that they just aren't great at but one option is to instead try to challenge the player's strengths. When there is only a single player character at the table, the individual weaknesses of their chosen class will tend to become more pronounced.

In a one-on-one game, the DM and player are taking turns two or three times as often, and because there is only one player, the combat probably doesn't involve more than a few monsters. This is because combat most of all tends to go by faster with only a single player than it does with groups. With larger groups, combat can be a nice reprieve from the taxing narrative requirements of social encounters and exploration. A greater emphasis on roleplaying and skills will emerge almost regardless of the DM's and player's style.
